ABOUT CESTARI FRESH LAMB.
As with most things, not all sheep are created equal. Our sheep are raised in a sustainable environment where they are treated with the finest of care. We raise wool-bearing sheep, which have leaner, milder meat than sheep traditionally bred for meat. With a sweet flavor and light taste, their meat is as unique as it is tender. It’s good for you, too: lamb is packed with heart-healthy vitamins and minerals from B-12 and Niacin to Selenium and Zinc.
When our rams have grown to about 150 lbs., we keep them nearby for local processing. Their meat is USDA inspected, hung for several days to age, and then immediately flash frozen to keep it fresh.
We ship our lamb straight from the freezer with a few useful accompaniments. Mrs. Cestari’s famous recipe comes with every order, and is a favorite of new and experienced cooks alike. We also tuck in a packet from the American Lamb Board that’s full of useful tips, tricks, and suggestions.

We pack the frozen meat with ice in an insulated 2" Styrofoam reusable box and send it to you. You’ll get a tracking number to plan for its arrival, but can always count on delivery within two days. It’s that simple.

ABOUT CESTARI SHEEP.
Cestari sheep live the good life in the mountains of Virginia. We care for them like family, giving them names and treating them with respect. The sheep thrive under our dedicated care. Just take Blackie. Though the life expectancy for ewes is ten years, she’s enjoying her “retirement” on our farm at the old age of twenty.
For sheep like Blackie, quality care starts at birth. Lambs are born naturally and fed by their mamas until they’re four months old. They’re weaned and pastured after that, so they graze on plenty of healthy grass. While we supplement their diet with local Virginia hay, corn, and grain, everything the sheep eat is all natural. The grain ration runs approximately in the 18 to 19% protein ration. We reserve antibiotics for sick sheep, and withhold treated sheep from processing for a full year.
Handling our sheep carefully is just the right thing to do, but it also makes their meat better. Lambs that are allowed to nurse contain more nutrients than those that aren’t. And studies consistently show that pastured meats offer more omega-3 fatty acids than conventionally raised animal products.

ABOUT THE CESTARI FAMILY.
The Cestari family has been in the farming business for more than 70 years. It all began with Francis Cestari, who founded the business in 1946 and is still busy on the farm. Francis got started in New York with three dairy goats, a dozen chickens, and a garden at the age of ten. That small enterprise grew into a big passion, and eventually, a successful Long Island farm stand.
In 1968, Francis eventually moved to Virginia’s Shenandoah Valley with his wife, Diane. Their family – sheep included – has called Augusta County home ever since. From their idyllic pasture, the Cestaris produce high quality wool yarns, as well as grain-fed lamb that is ethically sourced and delicious.
